What’s the last time you ate a protein bagel? Last week? Last Month? Never?! Here at POW, we make these a LOT. Protein Bagels are a great office snack to have around – and fun to share. They’re very calorie-friendly and fun to flavor! Someone brought a version with caramelized onions the other day and mmmm, they were delicious :-) Another person brought a vegan cream cheese (or cheeze?) a couple of weeks ago too and that was surprisingly awesome (if you’re curious, she followed this recipe! Sounds weird but trust me, it works!)

Now, my most basic bagel recipe was printed in the 2014 Protein Pow cookbook – page 11 for those of you who have it. It’s a pretty easy one and open to a lot of variations. See my Notes at the bottom of this post for ideas to get you playing with your bagels :-D

All that’s perhaps ‘tricky’ about making these bagels is that you have to have a donut mold. I like using a silicone one (easier to clean, you know?) but a metallic one will work too. Donuts molds are super cool by the way! Consider getting one so you can use it for both bagels AND protein donuts! I threw a link to a bunch of donut recipes at the bottom of this post. POW! Let’s do this:

Gluten-Free Protein Bagels RecipeIngredients

1/2 cup liquid egg whites
2 tbsp unflavored pea protein powder (as always, I used our delicious POW one)
3.5 tbsp gluten-free self-raising flour
1 tsp of bagel seeds (this thing from Trader Joe‘s– it’s amazing!)

Directions

1. Preheat the oven to 350 F (175 C)
2. Using a food processor, blend together all your ingredients.
3. Pour the batter into a donut mold
4. Bake until your knife comes out clean (usually no more than 12 minutes!)

Macros per mini bagel (out of 4-6 bagels, depending on your baking mold’s size, I got 5 of them): 40.4kcals, 3.5g protein, 6.2g carbs and 0 fat!

Bagel Notes:

If you’d like your bagels ‘breadier,’ feel free to up the amount of flour you use! Consider also throwing a 1/2 to 1 tbsp of oil to the batter so they don’t end up TOO ready and hard.

Want to make sweet bagels? Use a sweetener in the mixture above and throw some vanilla essence +/- cinnamon into the batter before baking! You can add some cocoa powder too if you want to make these chocolatey and more like, well… more like donuts.

Use any kind of herb you like to make these. One of my favorite bagels so far are Pizza Bagels! And I make them by flavoring my batter with rosemary, thyme, and some cheddar. Then I add cheese on top + pizza toppings! So it’s like a mini found pizza, with a top.

As mentioned in the intro to this post, you can use caramelised onions on top of the bagels as well as (or instead of) inside your batter. Caramelised onion bagels + cream cheese is a winning combo!
