1 cup brewed coffee, chilled
2 scoops chocolate whey protein powder (I love Thorne Research)
1 cup light canned coconut milk
1 tsp vanilla extract
1 Tbsp cocoa powder
1/2 cup chia seeds
1/4 cup shredded unsweetened coconut
1/4 cup mini chocolate chips or cacao nibs (optional)
1. Mix together coffee, coconut milk, protein powder, vanilla extract and cocoa powder using a hand mixer, blender, or just a plain ol’ whisk.
2. Place mixture in jar or bowl, mix in chia seeds, coconut and mini chocolate chips or cacao nibs. Cover and refrigerate for 1-2 hours.
