Oatmeal Raisin Protein Cookies (Vegan & Gluten-Free)

I’ve made them twice now and what I do is put them in these little round ‘cookie tupperwares’ I have and I take them out with me, e.g. I took a few cookies to the gym the other day to enjoy on my walk home – they were delicious!
You can play around with the recipe too by using different kinds of protein powder (rice protein, hemp, or casein would work well) and use different fillings too, like chocolate chips, coconut, or chopped nuts if you’re not into raisins.
