There are now thousands of recipes at proteinpow.com and, I’ve got to say, this is probably one of my top 10. I loved this apple crumble. LOVED it. I loved its extreme simplicity, its flavor, its texture… I loved its hefty punch of protein kaPOW! And the fact that it’s gluten-free, sugar-free, and nom nom nom – delicious.
And I have you guys to thank for it! Why? Because you chose it! You chose it over nine other options I gave you on facebook when we played ‘Choose the Next Recipe’ last night. You voted on what you wanted next and a Low-Carb Apple Protein Crumble won – by a landslide. Which is great! Because I never would have picked it. No. I would have picked option seven (Black Onyx Villain Protein Bars) or nine (Protein Inspector Gadgets). Seven because I love Black Onyx and nine because it was this game’s wildcard and I wanted to surprise you with something… creative. But until next time, Inspector!
M wildcards seldom make the cut when we play ‘Choose the Next Recipe’ on facebook anyways. So far, only one wildcard has won a game (it was the Cookie Monsterian Protein Muffins) but after that… nada. Majority always seems to gravitate towards protein twists on every day classics. Which is cool! Because that’s how this recipe was born.
250 g Quark (See Note 1)
1/4 cup Whey Protein Powder
1-2 Apple (2 small/1 medium)
1/4 cup Ground Almonds
1 tbsp Slivered Almonds
1/2 tsp Vanilla Pods (shaved)
1/2 tsp Cinnamon
1 tbsp Coconut Flakes
1/2 tsp Allspice
1. Mix the quark with the whey until you get a creamy pudding-type-mixture (you COULD add a couple of drops of apple flavoring to this if you like extreme appleness). Put this in a tupperware and stick it in the freezer for an hour or longer if you want more of an ice-cream.
2. Peel, slice, and steam your apple/s. You COULD leave the skin on too, especially if you want the extra texture. I just always think that apple pie and apple crumble is best with peeled apples. If you’re feeling lazy though, just don’t peel it. It’ll taste just as good.
3. Fry the coconut, spices, and almonds at a high heat on a (dry) nonstick pan. Mix them around with a (wooden) spoon so they don’t burn. You basically just want them to brown a little and toast-up
4. In two little bowls, add the apples, then 1/2 of the quark and whey mix, then 1/2 of the crumble mix, then the rest of the quark and whey mix and after that the second 1/2 of the crumble mix.
5. Top the whole thing with cinnamon.
6. Devour. And flip. Out.
Note 1: Every time I post a recipe containing quark, I get a ton of emails, tweets, messages and instagram comments asking me what quark is. quark is a type of really low fat cream cheese that’s fairly common here in Europe but pretty rare in the US for some reason.
You can find quark at some stores and amazon.com stocks but to be honest I wouldn’t worry about using quark if you can’t find it. Instead, use low-fat cream cheese or even blended cotagge cheese (blended because you want to get rid of any lumps in the cheese). You COULD also just use mascarpone or ricotta. It’s up to you and what flavors and macros you prefer.
Note 2: I know that this apple crumble isn’t really SUPER low-carb. That’s because of the apple! Which is hard to avoid when you’re making apple crumble. Compared to ‘regular’ apple crumble though (which is pretty much ALL sugar and fat) this one’s pretty low carb. In fact, I think it’s as low carb as it gets for apple crumble!
