These cookies are perfect for dunking into coffee or enjoying alongside a cup of tea! They’re dairy-free and a nice little snack to enjoy when you want something sweet but low in calories.
Ingredients:
1 cup liquid egg whites
1/2 cup vanilla pea protein powder
1/2 cup oat flour (gluten-free)
2 tablespoons coconut flour
2 tablespoons agave syrup
1/4 cup pecan nuts
Directions:
1. Blend and shape into seven balls. You can stamp them with a cookie stamp or you can just keep them flat.
2. Once flattened, bake your cookies on at 170 C (338) for about 25-30 minutes or until they’re cooked through. The end product is kind of a cross between vanilla cookies and pecan nut cake.
