Pecan Protein Cookies!!!!!! (Dairy & Gluten Free)

I’ll be away all day tomorrow and I plan on drinking a LOT of coffee. I’m going to need it! Because I’m waking up with the roosters and need to stay fully-powered until way after the sun goes down. So I made these cookies – to dunk into my coffees and munch-munch-munch my way into superhero status the whole day.


1 cup liquid egg whites
1/2 cup vanilla pea protein powder
1/2 cup oat flour (gluten-free)
2 tablespoons coconut flour
2 tablespoons agave syrup
1/4 cup pecan nuts


1. Blend and shape into seven ‘blobs’. You can stamp them with a cookie stamp for some ‘shapeage’ like I did or you can just keep them flat.

2. Once flattened, bake the ‘blobs’ on at 170 C (338) for about 25-30 minutes or until they’re cooked through. The end product is kind of a cross between vanilla cookies and pecan nut cake. Next to a glass of almond milk or a cup of coffe? KaPOW POW! Delicious.

Macros per cookie:

12g protein
10g carbs (out of which 4g is fiber)
5g fat
