Banana Cinnamon Protein Blondies
Just as people start peeling off that scathingly-hot foil veil to reveal the pseudo food that goes for food on transatlantic flights, I will take out these gorgeous blondies from my carry-on.
As they bite into their overcooked once-was broccoli and attempt to slice their is–this-chicken-because-it-tastes-like-plastic, I will bite into these delicious blondies.
And, as they focus their attention on the on-flight ‘entertainment’ to wash away any sense of understanding for what they’re actually consuming, I will close my eyes and savor every single bite.
Because these blondies turned out delicious, absolutely delicious.
What I did was this:
1 medium cooked sweet potato
1 medium sized ripe banana
1/2 cup pea protein powder
4 egg whites
1/2 tablespoon chicory powder (this is optional but it adds a nice malty flavor)
2 tablespoons rolled oats
1 tablespoon golden linseed
1. Blend all ingredients together and bake for 40 minutes at a medium-to-high oven (170 celsius or so).
2. Let it cool and slice into four.

11g carbos (4g sugars/1.75g fiber)

They turned out so ridiculously tasty, so soft and cakey and just plain old incredible. I recommend, highly. (Might have to pack some almond butter, just to throw this whole thing over the top).
