more Gojiberry Protein Pancake Towers


I’ve
kind of already posted about goji berry protein pancakes before (http://couched.blogspot.com/2011/01/egg-protein-goji-oat-pancakes.html) which I used to make them all the time with oatmeal + egg whites + cottage cheese – always topped with almond butter (something about the almond + goji combo, if you’ve never tried it, give it a shot).

Ingredients:

egg whites
quinoa flakes (instead of oats)
quark ( instead of cottage because, though it does pretty much the same job, I like it better for pancakes and stuff)
whey protein in there for the extra thickness (and protein punch)
apple fiber (optional)

Directions:

Fried them up in coconut oil and sandwiched them with homemade almond butter.
