Tropical Sunrise Protein Pancakes – by Victoria W.

My creation was inspired by the recent dreary winter weather.  I decided to bring a little sunshine back to my morning with my “Tropical Sunrise” protein pancakes (Banana Coconut pancakes topped with Mango puree!!!

Ingredients for the pancakes:

1 banana
1 egg
1/8 cup whey protein powder
1/8 cup coconut flakes
1/8 cup slivered almonds (any kind of nut, flour, or oats would do)
1/8 cup oats
1 teasoon vanilla

Directions:

Blend all of the ingredients in a blender and cook on medium on the stove top!

Mango puree:

Simply throw some mango in the blender and blend but still leave it a little chunky!  I added just a touch of sugar free maple syrup to it so it was like mango infused syrup. Top the pancakes with the mango puree and DEVOUR FOR POWER! Enjoy!
