I absolutely LOVE protein pancakes. They are my go-to treat on a Sunday. I love to experiment with all sorts of flavours… Sweet potato, Blueberry and lavender, Quest White Chocolate and Raspberry just to name a few. It was difficult to decide which recipe to post but it had to be this one in the end because let’s be honest, who doesn’t like chocolate? I hope you try these and enjoy them as much as I did. Feel free to substitute anything you like. Experiment and have fun!
1/4 Cup Oat Flour (ground oats)
1/4 Cup Almond Flour (ground almonds)
1 tablespoon Chia Seeds
1/4 Cup 0% Fage Greek Yoghurt
2 tablespoons Liquid Egg Whites (or 1 egg white)
2/3 Chocolate Chip Cookie Dough Quest Bar
1/3 Scoop Protein Powder (I used vanilla)
1 Cube 70% Dark Chocolate
1/2 teaspoon Vanilla Extract
1/2 teaspoon Chocolate Extract (can leave out if required)
Almond Milk (to get the right consistency)
Blend everything together. Spoon pancake mix into a frying pan using non stick 1 cal spray and cook on medium/low heat until set enough to flip (I also cover my pan with a lid to set the top a little before I flip) then cook the other side.
Protein Fluff Ingredients and Method:
170g tub 0% Fage Greek Yoghurt (or as much as you like)
1/3 scoop Protein Powder (I used chocolate)
10 Stevia Drops (I used toffee)
Cacao powder (as much as you like for taste)
1 teaspoon Chocolate Almond Butter (can leave out)
1. Mix everything together. Layer the pancakes with sliced banana (if you like) and fluff. Top the pancake stack with sliced banana and fluff.
2. Chop the rest of the quest bar and microwave for approx 15 sec (till puffy) let it cool and harden then sprinkle on top along with 1 cube 70% dark chocolate chopped up. Enjoy!
