Protein Strawberry Cheesecake by Fabio F.

Base ingredients:

100g ground almonds , cashews or Brazil nuts
20g honey
3g sunflower oil
2 tablespoons water


Microwave the honey and the water for about 15 seconds and mix together the other ingredients . Press the dough onto a 8 inch tray

Filling ingredients:

35g vanilla whey ( dont use french vanilla flavor !)
250g low fat cottage cheese
80ml ( g ) skim milk
25g oat flour
1 egg + 2 egg whites
1/8 of a lemon
lemon zest
50 drops sucralose / Splenda (I like it sweet! )


1. Blend everything together and pour over the base.

2. Bake for about 20 minutes at medium high ( important: do not overcook the cheesecake ) . Let it cool before adding the topping .

Topping ingredients:

300g strawberry
1/8 of a lemon
30 drops sucralose / Splenda ( strawberries in Brazil are a little sour ! )


Chop half of the strawberries and cook the other half with the lemon juice and sucralose in low heat . Let it cool and pour over the cheesecake.
