Vegan Protein Brownies by Dominique
I’m delighted to bring you guys a guest recipe by the awesome Dominique (pictured below) who’s vegan recipes are not only gorgeous and packed full of goodness, they’re unbelievably tasty as well!
2 large sweet potatoes
1/2 cup dates soaked in hot water
2 tbsp maple syrup
1/2 cup pea protein Pow powder
1/2 cup oat flour
4 tbsp raw cacao powder
Almond milk 1/2-1 cup
2 tbsp coconut oil
Icing: 1/2 cup dates, 1banana, dash of almond milk
1. cook sweet potato until tender transfer to food processor with soaked dates, banana, maple syrup and almond milk. This should form sticky mixture.
2. Put protein powder, oat flour and cacao powder into a bowl and pour in melted coconut oil. Then transfer sweet potato mixture into it and stir everything well until fully combined.
3. Transfer into lined baking tin and bake in 180 degree pre heated oven for approximately 45 mins.
4. For icing blend everything together and top on the brownies once completely cooled.
