Christmas Protein Truffles (Gluten-Free, Vegan, Raw)

Hi! I posted a drawing on Instagram & Facebook on Sunday of these little Christmas Balls. Actually, let’s call them Christmas Truffles, yeah? I drew out the ingredients out to show you guys how simple – and fun – these little things are!  I actually created this recipe for the new Protein Pow cookbook (out 2017) but figured to share it with you now because it’s an extremely easy and delicious recipe for the Holiday season!

christmas-protein-balls-recipeIt’s also the PERFECT thing for you to make and take with you to any Christmas parties or get-togethers. The truffles are a good lower-sugar and lower-calorie dessert or snack option that taste just as good – if not better – than a slice of Christmas Cake!

I’ve jotted down the basic recipe below but I want you to bear in mind that if there’s ANYTHING in it that you don’t like (for example, I know a lot of people don’t like raisins), you can simply leave that ingredient out and substitute it for something else (e.g. you can sub raisins for more dates or use some dried figs instead?)

This is a really really fun recipe to round the whole family for and make together over the holiday period. It’s a wonderful way to get everyone involved in Christmas snack-making! The truffles themselves are dairy-free, gluten-free, and feature absolutely no artificial sweeteners or random ingredients. All they have is protein, seeds, fruit and lots and lots of love :-)

Note: If you don’t care about making your truffles vegan, you *could* use an unflavored whey protein (like ours!) however, I suggest you add some ground almonds to your dough if you do that to ensure it ends up with the right consistency.

Here goes: 

4 tbsp chopped dates (41g)
1/4 cup (27g) pea protein powder (I used our one ingredient pea protein POW!)
3 tbsp pumpkin seeds (31.5g)
3 tbsp hulled hemp seeds (30g)
4 tbsp ‘Christmas Fruit’ (i.e. a combo of dried apricots, raisins, and sultanas)
3 tbsp dried cranberries (27g)
1 tbsp (21g) honey
1 tbsp (16ml) almond milk
1 tbsp (16g) walnuts
Cinnamon to taste
Mixed spice to taste
Grated orange peel (I just grated 1/2 of an orange into the mix – this is optional but delicious!)

Directions

1. Throw everything in a small food processor until you get a well-combined and delicious dough!

2. Divide this dough into 16 little truffles

3. Done!

Macros per truffle, out of 16: 56kcals, 3g protein, 6g carbs (out of which 1g is fibre), 2g fat!
