Vegan Protein Ice cReam Recipe

It’s been REALLY hot here recently so I’ve been craving a lot of COLD things!!! Cold drinks, cold ice, cold… ice cream. I normally make my Protein Ice Cream this way but a few weeks ago I thought hey, why don’t I try making ice cream using PEA as opposed to whey protein powder? And while we’re at it, why not make it completely dairy-free, raw, and vegan???

I’ve always been a sucker for a challenge so I went for it.

My inspiration was Booja-Booja, creators of THE best vegan ice cream on earth (in my opinion). They use cashews instead of cream which is BRILLIANT because when you soak cashews overnight, they actually absorb a lot of water. So I figured if I blend that, I’d end up with something equivalent to cream!

What I did was very simple. Perhaps TOO simple? (See notes below)

  • A splash Date Syrup
  • 40 g Cashew Nuts (Pre-soak in water overnight)

The end product was amazing!!! IT actually DID taste like ice cream. But there's a couple of things I'd like you to take on board if you'd like to make this too:

1. Consider adding a tbsp or two of coconut oil to your mix before freezing. This will make the ice cream smoother when it comes to when you scoop it out of the container. You'll notice right away in the video above and the picture below that my ice cream froze a bit too solidly. I think the coconut oil would help prevent that. And/or perhaps doubling the amount of cashews 🤔

2. Consider using different kinds of sweetener. I went with date syrup because I had some nearby (I used this one by Meridian; in the US, go with this) but am thinking maple syrup would be great here or even coconut sugar or granulated stevia if you wanted to go lower carb? Something like Truvia perhaps? I'm not sure what that'd do to the texture but I think it should work nicely.

3. If you want to try this with another protein powder, go ahead! I'd stay away from whey though. And hemp, unless you're going for a chocolate ice cream by adding a ton of cocoa. That being said, cocoa liquor would probably be better than cocoa powder for texture purposes?
