Pumpkin Pie Protein Bars – Protein Pow Style


The other day I was walking around a health food shop and stumbled upon not one, not two, but THREE different pumpkin flavored protein bars. Being a pumpkin fiend, I picked them all up and turned them over to see what they were made of. I was unbelievably disappointed. Heartbroken, one could say. Because NONE of them had pumpkin! You know, actual pumpkin?

IMG_0761They all had ‘pumpkin flavoring’ instead. And a bunch of other random ingredients. They didn’t even have actual cinnamon! Or nutmeg! Or, you know, allspice! The ingredients that make up pumpkin flavored desserts, like pumpkin pie. I didn’t end up buying any of them but you know what I did? I came home and whipped up what I was hoping (even though I knew that it was unlikely verging-on-impossible) to find at the store: a protein bar with ACTUAL pumpkin. And pumpkin spice. A bar that actually felt like biting into pumpkin pie. IMG_0781A bar to give us that holiday pumpkin spirit. Say hello to that bar, it’s about to change your pumpkin season! And it’s vegan, gluten-free, and devoid of all artificial yadiyadiyas.


60g pumpkin puree
50g cashew or almond butter
50g Pea Protein Pow Cooking Mix
20g coconut sugar (or granulated stevia, if you want your bars lower in carbs)

1 tsp pumpkin spice


1. In a food processor or bowl, mix all ingredients together until you get a dough that you can shape with your hands.

2. Divide your dough into balls (I made 4) which to then press into rectangles.

3. Eat right away or refrigerate!

Note: Consider adding some chopped pecans to your bars, either inside the batter on crushed up outside them!

    I LOVE IT when recipes are laid out in clear understandable units! I find cups to be very confusing for ingredients that are not actually liquid and tend to freak out or just skip recipes because of them. I do accept my own inability to relate to other human beings when it comes to figuring out why everyone who bakes or cooks (or eats!) doesn’t have a kitchen scale- the cheapest and most helpful kitchen tool aside the knife! Thank you so much for these awesome recipes, entertaining posts and using humane units (and providing a conversion table)!
