Valentine’s Day Protein Chocolates -Five Ways

Protein Heart-Shaped Box of Protein Truffles and Chocolates When someone gives you an assorted box of chocolates, it’s hard to know what you’re going to get until you select a chocolate and bite into it. And then it’s too late. You’ve made your selection and now you’re stuck eating it. Of course, you can always bite into each chocolate to see which one you want to eat and leave the rest behind… but this is usually frowned upon (hehe). Truth is, getting an assorted box of 100% delicious chocolates is rare. Assorted boxes usually contain one or two really good chocolates, a few OK ones, and a bunch of yucks.

COUPLEBut it doesn’t HAVE to be this way, not for you and certainly not for your loved ones. That’s because you can MAKE your own assorted box of chocolates to give to your special someone (or to enjoy yourself because why not?) You can create a box that’ll be guaranteed to impress and satisfy the pickiest of taste buds. You’ll hit the jackpot with every chocolate, it’ll be a case of firework after firework, BOOM BOOM BAAAAM!

Now, let me digress a little bit before I unveil FIVE of my favorite protein chocolates recipes. In order to best understand why a box of protein chocolates is just so insanely exciting and worth making,  I want you to consider three scenarios (all of which have been inspired by true events, hehehe):

You open a box of chocolates, pick one randomly, and find yourself chewing your most hated chocolate filling, unable to expel it from your mouth because someone just gave you the box and they’re staring at you expectantly. So you chew. You chew it. You chew and you chew until the memory of chewing scars you so profoundly that you don’t want to reach into the box ever again. To hell with the whole thing, you just can’t afford to risk it.

Has this ever happened to you? No? Hmmm. OK. How about this:

You’re on what amounts to your first proper date. He’s just given you a box of chocolates. You reach for the box, open it, and take out a chocolate. You put it in your mouth, bite into it and…noooo! It’s extra-chewy caramel! And it’s sticking all over the top of your mouth! So you swallow the thing and then try to get rid of the caramel from your teeth using your tongue, knowing fully well that you look  like a bozo while you’re doing it. After successfully dislodging the last of the caramel from the inside your mouth, the guy invites you to have another chocolate and you go ahead and eat one because a) he’s kind of cute and b) you don’t want to be rude. That’s when you realize that all the chocolates are the same – they’re ALL ‘caramel’ and you’re back where you started: looking like a clown.

No? That hasn’t happen to you either? Hmmm OK. How about THIS:

You’re single. Every store you go to now has a red/pink aisle full of candy and heart-shaped boxes of sugary you-name-its. There’s a girl you like and you think she likes you back so you want to make a move. You feel ready. And you think Valentine’s Day is the perfect day to declare your feelings to this girl. So you venture into the red/pink aisle in search for something to give her – something ‘special’. You spend 15-20 minutes there and arrrghhhh… nothing makes any sense! This girl is someone you go to the gym with and you know for a fact that she’s really into healthy eating, cooking, and passionate about her food. You want to make an impression and you know that she probably won’t like a box of mediocre-tasting sugary candy. So what do you do? You head home with a plan: to make some delicious protein dark chocolates – Tiramisu Flavored, Nutella Flavored, Caramel and Sea Salt Flavored, Almond Flavored – and stick them all in a box. Sounds more like it, huh? Welcome to this post, featuring not one but FIVE recipes.

7 medjool dates
1/4 cup vanilla whey protein powder
1/4 cup  almond or regular milk
2 tablespoon coconut flour
1/2 teaspoon sea salt

Dark Chocolate Protein Chocolates

3 tablespoons cocoa powder
3 tablespoons chocolate whey protein
1/4 almond or regular milk
1/2 tablespoon agave syrup or your sweetener of choice

Almond Protein Chocolates (Vegan)

1/2 cup vegan protein powder
1/4 cup ground almonds
1 tablespoon almond butter (I used this one by Meridian)
1/2 tablespoon coconut sugar of your sweetener of choice
1/2 cup almond milk

Tiramisu Protein Chocolates

2 tablespoons mascarpone cheese (low-fat or regular)
2 tablespoons vanilla whey protein powder
2 tablespoons freshly-brewed espresso
1 tablespoon coconut flour

Nutella Protein Chocolates

1/2 cup toasted hazelnuts
1/4 cup vanilla whey protein powder
1/4 cup cocoa powder
1/4 cup almond or hazelnut milk
1/2 tablespoon coconut sugar of your sweetener of choice


The directions for ALL the chocolates are the same, as are the way they’re coated so I’m giving you one set of directions for all of them. You can change the chocolate (i.e. you can use a darker one if you wish or a more milky chocolate for the coating). You can also top the chocolates with chocolate flakes, coconut flakes, nuts, a bit of white chocolate like I did for some of them, etc. This is up to you. The only thing you NEED to do to make the chocolates is mix your batter, melt some chocolate, stick the chocolate in a chocolate mold (I used this one and one like this one), add your filling, cover the filling with more melted chocolate, and chill. It’s honestly REALLY easy. Here’s what you do in more detail:

1. Blend all the batter ingredients with a food processor or handheld blender until you form a smooth and creamy sort of ‘dough.’ If you’re making the tiramisu chocolates, mix the batter roughly with a spoon as opposed to using a blender. That’s because you want the ingredients to mix up a bit more ‘roughly’ so you get more of a texture.

2. Melt a bar of chocolate or two depending on how many chocolates you want. I used 85% dark chocolate but anything about 75% would be great. Melt your chocolate in a bain marie – i.e. a glass bowl on top of a pot of boiling water.

3. Get out a silicone chocolate mold or two. If you don’t have one, you can use muffin cases and make ‘chocolate cups’ instead. What you do is pour the melted chocolate on the mold, add a little bit of your filling on top of the melted chocolate, and then cover with the rest of the chocolate.

4. Stick the chocolates in the freezer for an hour until they set.

5. Remove them from their molds and karapowpowpow! they’re ready!

POWMacros per chocolate will depend on the size of mold you use, how many you choose to make, and what type of chocolate you use. The above ingredients give you six chocolates or four ‘cups’ if you make them inside silicone cases (in which case their unmolding will go something like this).
