Apple, Strawberry, & Blueberry Protein Pancakes

My dad has made me promise that for the duration of my Stockholm visit, I must make him protein pancakes every day. He almost pulled out the biblical canons for me to swear to this under oath so humoring his request was out of the question. I couldn’t have said ‘no’ anyways though, because my dad is quite possibly this blog’s number one fan. He’s also a great dad :-) And why am I telling you this? Well, because, for the next two weeks, this blog will be all about protein panckake recipes, thing of it as = Pancake Pow(d)er ! The protein-pancake-loving-souls amongst you will love this, much to the chagrin of those of you who don’t care for pancakes. Maybe by the end though, I will have managed to turn the latter into the former? Because what’s not to love about protein pancakes? The stars are the limit in their galaxy ;-)

Back view

Ingredients:

3 egg whites
1 cored big apple
1/4 cup strawberry whey protein
1/4 cup coconut flour (I found some at the supermaket!)

Cutting in

1/8 cup blueberries (added after mixing the above)

 Directions:

Blended first and then panfried on these beauties which were further nonsticked with the assistance of some good old coconut oil

One thing you need to remember about these pancakes is to treat them gently. You see, because of the apple and bluebs, they end up really moist and are consequently a bit fragile to flip, particularly if you try to impress yourself (or others) with some of your flipping “skills”(I tried this and it was disastrous). What you got to do to prevent a catastrophe is just cook them at a low/medium heat (so they cook thoroughky without burning) and THEN carefully flip them (you don’t need to be sissyish about it though – stay fearless in your flipping, just do it slowly). The result is worth the extra attention because, Moses, what a grandious stack of pancakes this one was! Like yesterday’s pancakes (and actually probably more so) these guys were bursting with blueberries and fruity wet deliciousness, oy, oy, oy!!!
