Zucchini Protein Bars – by Suzanne P

Suzanne over on facebook came up with an awesome recipe for zucchini protein bars and wanted to share it with the blog so :-D!! I’ve actually JUST made it and took some pics too :-) OK, mine turned out more like cakes than protein bars because I think I added less oats than the recipe called for and more egg but woop woop! Absolutely delicious nevertheless! LOVE cooking with zucchs and using applesauce is just grand, I had totally forgotten and now that our apple tree is blooming, yehaw :-D Anyways, here is Suzanne’s kicking recipe: THANK YOU Suzanne!!!

Ingredients (DRY):

1 1/2 cup ground oatmeal (use coffee grinder)
2 scoops vanilla protein powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon baking powder
1/4 cup chopped pecans (or walnuts)

Ingredients (WET):

4 egg whites
2 teaspoon vanilla extract
2 tablespoons coconut oil
1 6oz plain yogurt (or vanilla to make a tad sweeter)
1 4oz applesauce cup ( 1/4cp)
1/4 cup stevia*
2 cups zucchini grated and squeezed of excess juice


1. In two separate bowls ( wet in larger), mix and whisk all dry ingredients. Mix and whisk all wet ingredients first THEN add in zucchini, stir in.

2. Add dry ingredients in two to three batches into wet.

3. Place the above in a 7x 12 1/2 Pyrex dish or similar size. Bake for 30 minutes at 350 degrees fahrenheit or around 170 celsius. Hope you all ENJOY!! YES, there is fat..but good fat!!It’s OK!! :)

Keep refrigerated

Macros per Serving (out of 12):

7.72g protein
4.7g fat
10.4g carbs

PS – this recipe is at the ‘just enough’ sweetness level. I think its perfect but those who may prefer it slightly sweeter, use a little more stevia or add a flavored yogurt as suggested (I only had packets of stevia and filled up 1/4cp). Makes 12 bars ( if u use a bigger dish and cut more bars/squares, macros will need to be adjusted).
