Protein Nanaimo Bars – by Antonella


For the base

1/2 cup almond meal
1/2 cup unsweetened coconut flakes
1/8 cup cocoa powder
1 tbsp coconut oil
1  tbsp maple syrup (or sweetener of choice)

For the creamy middle

1/2 cup unsweetened coconut flakes
1/2 cup cashews
1 scoop vanilla protein powder of choice
1/2 cup almond milk

For the top

1. 100g 80% dark chocolate.


1. Get a 4×6 glass pyrex dish and line with foil.

2. Melt the coconut oil and mix in the remainder of the base ingredients. Mix thoroughly

3. Line the bottom of the dish with the base and place in freezer (for 3-5 minutes).

4. Blend the middle ingredients thoroughly until they are a custard-like consistency.

5. Spread middle layer over base and place back in the freezer (for 3-5 minutes).

6. Nuke the chocolate at 50% for 2 minutes, stopping every 30s to stir. If you are fancy, you can melt the chocolate in a bain-marie.

7. Pour chocolate layer over the top and pop back in the freezer for additional 3 minutes for chocolate to set.

8. Enjoy! And if you have left-overs (not that I ever do), make sure to leave them in the fridge!!
