Chocolate Banana Cream Pie – Chelsey
Ingredients for the Crust
1/2C crunchy peanut butter
Ingredients for the Filling
1 medium banana
1/2C Vanilla Whey
2T ground almonds
1/4C almond milk
1C cacao nibs
Preheat oven to 325F.
Grind up oats to a coarse flour – I did this by hand in a mortar and pestle, but the blender works great as well.
Mix ground oats, peanut butter and honey until everything is fully incorporated together.
Press into a 9” pie pan – across the bottom as well as up the sides.
Mash the banana thoroughly in a bowl, then add the whey, eggs, ground almonds, and almond milk and mix well. Add the cacao nibs and incorporate in the batter.
Pour into the crust.
Bake in the oven for 25 minutes, or until firm.
Cool and Enjoy! The filling tastes just like a cream pie, just without all the extra sugar and fat!
