Carrot Orange Protein Cookies – by Andréa

One of my favorite recipes was from my mom’s set of Betty Crocker recipe cards, a carrot cookie with an orange butter icing. When I started protein baking, I knew I’d have to recreate this favorite. And I’m happy to say, it worked! This recipe is delicious! I love the carrot-orange flavor combination, and these cookies are great with fresh carrot-orange juice!

I used whey protein powder since I wanted a cake-like cookie, and it bakes up well with the carrots and coconut butter. The icing also uses vanilla whey, and is flavored with fresh orange juice and zest.

Carrot Orange Protein Cookies (makes 12 cookies)

Ingredients for the cookies:

1/2 cup natural vanilla whey protein powder (45g)
1 cup cooked carrots, mashed (2 cups (256g) raw)
1/4 cup coconut butter (64g)
a pinch of sea salt
2 tablespoons shredded coconut (15g)

Ingredients for the icing:

1/2 cup natural vanilla whey protein powder (45g)
2 tablespoons fresh orange juice (30ml)
1 tablespoon orange zest (15ml)


1. Preheat oven to 325F (163C).

2. Mix whey powder, carrots, coconut butter, and salt until combined.

3. Stir in the shredded coconut.

4. Drop (12) spoonfuls of cookie dough on a parchment-lined cookie sheet.

5. Bake for about 12 minutes, or until firm.

6. Meanwhile make the icing by mixing the whey powder with orange juice.

7. Fold in the orange zest.

8. Remove cookies from oven, and let cool.

9. Ice cooled cookies, and enjoy!

10. Store in the refrigerator.

Macros per cookie (of 12):  6g protein, 5g carbs (2g fiber, 3g sugar), 4g fat, 78 calories.
