Avocado Matcha Protein Pudding – by Shannon

While I love chocolate, I wanted to make an avocado pudding while maintaining its gorgeous color, because I just think it is so pretty. Plus, I love matcha and egg white protein powder and I don’t see a lot of recipes including these ingredients.

This is a pretty flexible recipe; you could add banana to sweeten it and bump the volume up a bit, you could use honey or agave instead of the syrup, add chia seed, goji berries… etc,.


  • 1 medium ripe avocado
  • 2 scoops of vanilla egg white protein powder (I used GNC’s Vanilla Ice Cream)
  • 2 teaspoons of matcha green tea (unsweetened) powder
  • 1 teaspoon vanilla
  • Pinch of sea salt
  • 2 tablespoons of Walden Farms Pancake Syrup
  • Unsweetened coconut flakes (optional – for sprinkling)


Blend avocado first then slowly add protein powder, matcha, vanilla, sea salt, and syrup. You will have to scrape down the sides a few times
