Avocado Matcha Protein Pudding – by Shannon
I have seen a lot of avocado puddings, but mainly chocolate. While I love chocolate, I wanted to make an avocado pudding while maintaining its gorgeous color, because I just think it is so pretty. Plus, I love matcha and egg white protein powder and I don’t see a lot of recipes including these ingredients.
This is a pretty flexible recipe; you could add banana to sweeten it and bump the volume up a bit, you could use honey or agave instead of the syrup, add chia seed, goji berries… etc,.
- 1 medium ripe avocado
- 2 scoops of vanilla egg white protein powder (I used GNC’s Vanilla Ice Cream)
- 2 teaspoons of matcha green tea (unsweetened) powder
- 1 teaspoon vanilla
- Pinch of sea salt
- 2 tablespoons of Walden Farms Pancake Syrup
- Unsweetened coconut flakes (optional – for sprinkling)
Blend avocado first then slowly add protein powder, matcha, vanilla, sea salt, and syrup. You will have to scrape down the sides a few times
