This recipe hails from page 103 of the new Protein Pow cookbook and it’s one of my favourite. It’s a really tasty and easy one! And a great option for anyone wanting to avoid dairy or simply looking for something different.
Each truffle packs just 45 calories, 4 grams of protein, 4 of carbs and 1 of fat. They’re a lovely treat to have alongside a nice cup of tea or coffee! You plan play with the recipe too. For instance, if you want to make sunflower seed protein cups, all you have to do is put your melted chocolate inside muffin cups, your sunflower-seed filling inside, more melted chocolate on top and refrigerate for an hour. 1⁄4 cup pea protein powder
1 tablespoon sunflower seed butter
1⁄2 tablespoon honey
1 tablespoon cashew milk
1 tablespoon vanilla extract
4 squares (40 grams) dark chocolate (70–90%)
1. In a medium-size bowl with a spatula, mix all your ingredients together, except for the dark chocolate, until you get a soft dough that you can shape with your hands. If your mixture is too wet or sticky, add a bit more pea protein powder.
2. Roll your dough into 6 balls.
3. Melt your dark chocolate in a bain-marie (i.e. a glass bowl on top of a pot of boiling water).
4. Using a spatula (or your hands), dip the truffles into the chocolate.
5. Place the chocolate-coated truffles onto a nonstick silicone tray or a tray covered with baking paper or aluminum foil.
6. Leave in the fridge for a couple of hours until the chocolate sets or, if you’re in a hurry, put them in the freezer for 20 to 30 minutes.
Macros per truffle (without the chocolate coating): 45 kcals, 4 grams protein, 4 grams carbs, and 1 gram fat
