Flu Fighter Protein Cookies (Dairy-Free, Gluten-Free)

Banana Bread Protein Cookies

I got back from Greece with a cold! Got to love airplane germs… naaat :-( Wanting to attack the cold with something other than copious amounts of tea today, I made these ‘flu-fighter protein cookies.’ The recipe is a twist on on a recipe for ‘flu fighter cookies’ posted on The Food Network website (this recipe). To be honest with you, I doubt mine or their cookies are able to properly FIGHT whatever germs are in my system right now but hey, it’s always a nice to have an excuse for a special cookie, especially one as delicious and nutrition-dense as this one.

Compared to the Food Networks’s Flu Flight Cookies, mine are lower in sugar, higher in protein, and cakier – like a cross between an oatmeal cookie and soft gooey nutty banana bread. Give them a shot! Both I and everyone who’s tried them recommend these cookies for sure :-)

PS: If you’re wondering what makes these cookies more ‘medicinal’ or ‘therapeutic’ than regular cookies, the answer is ginger, cinnamon, cloves, honey and orange – all anti-inflammatory ingredients that some argue can make a difference when your body is actively fighting germs :-D

Ingredients

1 tablespoon freshly grated ginger
1/4 cup gluten-free flour
1/4 cup pea protein powder (I used our gorgeous pea)
3/4 teaspoon baking soda
1 teaspoon ground cinnamon + ground cloves
1/4 teaspoon salt
½ cup almond butter
1/2 cup erythritol
2 large eggs
1/4 cup honey
1 small banana
2 teaspoons orange-zest
1/2 cup oats
1 cup goji berries
3/4 cup roughly chopped walnuts, toasted
2 tbsp sprinkled (this ended up being totally unnecessary because you can’t even see them in the final product but… you know, I added them for extra cheer)

Directions

1. Mix everything together in a bowl and press the batter around with a fork/spoon until you get a batter like the above.
2. Divide the batter into 10 large cookies.
3. Bake on a cookie tray for ten minutes at 375 F (190C).
4. Press them down with a fork or spatula so they flatten a bit.
5. Leave to cool.
6. Enjoy these spicy soft gooey cookies!
