Coffee Crunch Protein Bars – by Rouba H.


This recipe was an entry to our Coffee Pow competition submitted by Rouba H (aka the_foodie_kitchen on instagram!). It goes like this:


1/2 cup
2 tblsp chocolate whey protein powder
2 tblsp peanut butter
1 tblsp Cocoa powder
1/2 cup of milk of choice
2 tblsp freshly brewed coffee
5-6 tblsp coconut flour
3 tblsp raw buckwheat granules
stevia drops according to taste
6 squares (60g)
85% dark chocolate


Melt the dark chocolate either using Bain Marie method or microwave for 1 minute. (I always use microwave method) Add remaining ingredients to a bowl & mix well to combine until a ‘dough’ like mixture is formed. (Depending on your protein powder you may need to adjust the coconut flour + also use stevia drops according to taste). Form into mini protein bar shapes. Dunk in the melted chocolate then place in non-stick paper on a plate or tray & put in fridge to set. Enjoy!
