Coffee & Chocolate Protein Truffles (Vegan)

Seriously, I’m not exaggerating. If you like chocolate, coffee, and the finer things in life, this one’s for you:
These truffles? Oh! They MELT IN YOUR MOUTH. They taste indulgent and delicious yet they’re sugar free, dairy-free, gluten-free, and PACKED full of nutritious goodness. And mmm, chocolate :-)
They’re also really easy to make! A perfect example of how easy it is to combine coffee, protein, and chocolate: three things that I bet, those of you who are like me, absolutely adore.

Without further ado though, I present to you… this crazy good recipe:
Ingredients
1 tbsp Pea Protein Powder
1 tbsp Cocoa Powder
2 tbsp Ground Almonds
1 tbsp Stevia Drops (toffee flavoured works well!)
1 tbsp Freshly Brewed Coffee
1 tbsp Almond Milk
40 g Unsweetened Dark Chocolate (I used 85%)
Directions
1. In a bowl, mix all your ingredients together – except for the melted chocolate.
2. Melt your dark chocolate in a bain marie (a glass bowl on top of a pot of boiling water).
3. Shape your dough into balls, or truffles.
4. Dip your truffles into dark chocolate!
5. Top your truffles with ground coffee and/or pistachios! This is optional but adds a great crunch and flavour.
