Coffee & Chocolate Protein Truffles (Vegan)
Guys!!!! Stop what you’re doing and print out this recipe. Well, wait, don’t stop reading! But do stop when you’re done and print this recipe out, OK? Your tastebuds will thank you for it. Seriously, I’m not exaggerating. If you like chocolate, coffee, and the finer things in life, this one’s for you:
These truffles? Oh! They MELT IN YOUR MOUTH. They taste indulgent and delicious yet they’re sugar free, dairy-free, gluten-free, and PACKED full of nutritious goodness. And mmm, chocolate :-)
They’re also really easy to make! A perfect example of how easy it is to combine coffee, protein, and chocolate: three things that I bet, those of you who are like me, absolutely adore.
I hope too, by the way, tha these truffles inspire you further to send me an entry for our Great Coffee Pow competition! You have all week and this weekend to send me something. It could be anything. Heck, you COULD, if you wanted, go ahead and make THIS truffle recipe and send me your photos as your entry.
Have you seen the prizes????
They’re a coffee and protein lover’s dream! So do send something through, yeah?
Today, tomorrow, this weekend? Join our coffee-fuelled party; I’d love to have you!
Without further ado though, I present to you… this crazy good recipe:
1 tbsp Pea Protein Powder
1 tbsp Cocoa Powder
2 tbsp Ground Almonds
1 tbsp Stevia Drops (toffee flavoured works well!)
1 tbsp Freshly Brewed Coffee
1 tbsp Almond Milk
40 g Unsweetened Dark Chocolate (I used 85%)
1. In a bowl, mix all your ingredients together – except for the melted chocolate.
2. Melt your dark chocolate in a bain marie (a glass bowl on top of a pot of boiling water).
3. Shape your dough into balls, or truffles.
4. Dip your truffles into dark chocolate!
5. Top your truffles with ground coffee and/or pistachios! This is optional but adds a great crunch and flavour.
