Dairy-Free & Vegan Protein Ice Cream
It’s been REALLY hot here recently so I’ve been craving a lot of COLD things!!! Cold drinks, cold ice, cold… ice cream. I normally make my Protein Ice Cream this way but a few weeks ago I thought hey, why don’t I try making ice cream using PEA as opposed to whey protein powder? And while we’re at it, why not make it completely dairy-free, raw, and vegan???
I’ve always been a sucker for a challenge so I went for it.
My inspiration was Booja-Booja, creators of THE best vegan ice cream on earth (in my opinion). They use cashews instead of cream which is BRILLIANT because when you soak cashews overnight, they actually absorb a lot of water. So I figured if I blend that, I’d end up with something equivalent to cream!
What I did was very simple. Perhaps TOO simple? (See notes below)
