Pumpkin & Sunflower Seed Protein Pow Bars (and a DISASTER)
These bars are really fun to make and a great example of just how fun and easy it is to play with your ingredients to create your own delicious bars of Pow goodness!
Ingredients
1/4 cup (22g) gluten-free oat flour (or just ground-up gluten-free oats)
1/8 cup (15g) whey protein powder
1 heaping tbsp (15g) coconut flour (use our amazing creamy all-natural & hormone-free whey!)
1/4 cup (30g) ground pumpkin and sunflower seeds (see Note below for subs)
1/8 cup (25g) date syrup (or honey or agave)
1 tbsp (15g) pumpkin seed butter (or peanut butter)
1 big tbsp (20g) almond milk
2 squares (20g) 85% dark chocolate
Directions
1. Chuck all your ingredients in a bowl, barring the dark chocolate. Mix everything with a spoon until you get a dough (if it’s too dry, add more liquid; if it’s too wet, add more seeds or mix!) and then, using your hands, shape this dough into either 4 bars or 6 truffles!
2. Melt your dark chocolate and dunk the bars (or truffles) in there before placing the lot on a plate or tray lined with aluminium foil for a couple of hours. Done!
Notes
This is the sunflower and pumpkin seed mix that I used to make these bars. If you don’t have it, feel free to use another kind of ground-up nuts (like almonds, peanuts, or a combo of the two!)
