Guy Fawkes Protein Brownies

 
Here’s some Guy Fawkes Protein Brownies in celebration of bonfire night in the UK! 
 

Ingredients:

1/4 cup cocoa powder
1 cup cartooned coconut milk (or any other milk)
1/4 cup coconut flour
2 big cooked beets
1/2 cup liquid egg whites
/2 cup chocolate vegan protein powder
1 teaspoon baking soda (aka bicarbonate of soda)

Directions:

1. Blend all ingredients together.

2. Bake in a small (6-9″) brownie pan at 160 C (320 F) for about about an hour or until, when stabbed with a knife, your knife comes out clean.

The brownies ended up really moist (you can tell by looking at the pics) and almost fudgy in texture. That’s because, if you notice the ingredients, most of their body came from the vegan protein powder and the coconut flour. What this meant is that they were super dense. If, for whatever reason, you don’t have or want to get vegan protein powder, we recommend you make them with either chocolate pea protein powder or casein. You can also add some ground almonds to the mix to make them even denser (and, of course, almondy).

Once the brownies are done, slice the whole batch into twenty four squares before placing them all in a Tupperware.

  1. Hey, just wanted to say I recently stumbled upon your site and as a realtively novice health enthusiast, but long-time baker and cook I absolutely love your site!

    One question: I’ve noticed you mention cartoned coconut milk in several recipes. Are you referring to things like the Silk brand, which is a bit more watered down than, say, canned coconut milk? I’m assuming so since the nutrition facts are comparable to those in the almond milk.
