Mini Turkey Burgers (with Gluten-Free Protein Buns)
Ground turkey, What can you do with it? Lots of things! You can use it to make a turkey lasagne, turkey meatballs, ‘chili con turkey’, turkey pasta sauce, turkey enchiladas, or my all-time-favorite: Mini Turkey Burgers (with Gluten-Free Protein Buns). This is how I make them:
Ingredients
400 g Turkey Mince
1/2 Onion (Red, diced)
1 clove Garlic
1/4 cup Oats (ground)
1 tbsp Herbamere (or salt)
1/2 tbsp Paprika
1 tsp Pepper
1 tbsp Lemon Juice
Directions
1. First, cook up your onion and garlic on a nonstick pan further nonsticked with some coconut oil or a low-calorie cooking spray (like PAM). Cook the onions until they start to caramelize and brown.
2. Throw the onions and garlic into a bowl along with the rest of the above ingredients and mix everything together using your extremities or a good ol’ fashioned spatula.
3. Reach into the mix and shape six small burgers out of it – or four big ones.
4. Fry them up.
5. Stick them between some buns, add toppings etc, and enjoy!
I actually made some gluten-free protein buns using 1/8 cup of rice flour, 1/8 cup of buckwheat flour, 1/4 cup of pea protein powder, 3/8 cup of egg whites, 1 tsp of baking powder and seasoning. They were really nice but a bit dense at the end (I should have aerated my mix more and added some liquid besides just the egg whites).
