Today, I bring you guys a guest recipe by Beth Workman – SCI-MX sponsored athlete, personal trainer, and bikini competitor. I made her pancakes this morning and they’re really quick and easy to make! They also need very few ingredients and you can play around with the batter by adding a bit of milk, mushing in a banana, or throwing in a tbsp or two of peanut butter. As a bikini competitor, I try to keep in shape year round, whether I am competing or not. I cycle my carbs and this works great for me – it gives me the results I want! But I am only human of course and I have a very sweet tooth so every once in a while I have to have something sweet. The perfect treat for me on a high-carb day is protein pancakes. The ingredients in the pancakes are all foods I incorporate into my weekly diet. Well, all of them except for the syrup! These pancakes take five minutes to prepare (and even less to eat, hehe). Please do try them! And let me know what you think. Here they are:
1/2 cup oats (gluten-free or regular)
2 Scoops SCI-MX Ultra Whey Protein Powder (Vanilla)
1/2 cup liquid egg whites
1/2 cup cottage cheese
+ add a dash of skimmed milk if you want to thin the mixture a little
1. Heat a nonstick pan with coconut oil
2. Using an electric whisk, mix all ingredients together.
3. Pour into the hot pan. Flip when the edges start browning and you start to see bubbles appearing on the pancakes’ surface.
4. Consider serving with blueberries, syrup (sugar-free or regular), but butter, bananas, etc.
Macros for ALL the pancakes (which you can split into two if you’re having as a lighter breakfast or snack): 537kcals, 60g protein, 55g carbs and 9g fat.
