Orange & Vanilla Protein Pancakes (Gluten-Free)
Let me tell you about these pancakes:
They weren’t perfectly round. They were more like… continents – a bit Pangean. My first thought was “oh no! I made a terrible batter! It’s not thick enough! I must fix it by adding other stuff to the mix!” But I didn’t. I panfried the whole thing as it was because I tried one of the little pancakes and while deformed, they were delicious! Something about the vanilla, orange, and almonds just makes my heart go boom boom – and I think it will yours too.
1/4 cup vanilla whey protein powder (make sure you use a REALLY tasty one because it makes a difference!)
2 whole eggs
1 egg white (whose yolk, if you were curious, went to the dogs)
1/4 cup almond milk (or cartoned coconut milk)
1/4 cup ground almonds
1/4 cup buckwheat flakes (can sub with oats)
1 tbsp orange zest
1. Whisk everything together.
2. Fry up on a nonstick pan further nonsticked with some coconut oil or low-calorie cooking spray (I suggest you make them small so they’re easier to flip).
3. Top with syrup, fruit, nut butter and/or bacon and BAM! That’s breakfast sorted.
Macros per 1/2 batch: 299kcals, 25g protein, 11g carbs and 17g fat.
Vanilla whey protein powder is tricky. It’s tricky because there are far too many brands who sell really artificial-tasting (and a bit, well… gross) vanilla-flavored whey protein powder. It’s not as extreme as it is with chocolate-flavored whey protein, but it’s equally hard to find a REALLY good vanilla whey. Over the years, I’ve tried over a hundred different brands of vanilla whey. Amongst them, I’d say only five or six have really done it for me. You don’t HAVE to buy vanilla whey if you don’t want to though, you can always flavor your own by adding vanilla essence or powder to unflavored whey along with your sweetener of choice (this can be stevia, sucralose, erythritol, or even coconut sugar!)
