Coffee & Whey Protein Bars
Welcome to the first recipe I make from the Protein Pow Request Vault – a vault where your protein dreams hang out on their way to becoming a reality. The way the Protein Pow Request Vault works is simple: you go to the Recipe Request Vault in the Protein Pow Forum, you write down a food that you want me to ‘proteinize’ and give you a healthy recipe for. It could be anything – a Mississippi Mud Pie, a Peanut Butter Cheesecake, a Deep Dish Pizza, a Mars Bar, etc. The more detail you give me about the food you want, the better. You can even include links to particular foods online that you want to be made healthy.
Dream big. If you want something that has never done before, feel free to include it too. By this I mean, say you’ve ALWAYS wanted to have a healthy Klondike bar but one that’s filled with strawberries and chunks of fresh fruit instead of cream. Well, go for it. Request it. Or say that you’ve always dreamed of eating a cheesecake with chunks of brownie inside. Boom: add it to the Vault. You get the idea.
What I will then do is go into the Vault once or twice a month, pick one of your recipes, and make it. I want to also start drawing the person whose recipe I make! So I’ll just message whoever it is whose recipe I’m making, ask them to email me a photo, and draw them on here. I can’t promise you that my drawing will look ANYTHING like you but… hey, I think it’ll be fun!
So, yeah. This is the first recipe I make from the Vault and it comes from Ilya. She wanted a protein bar – a protein bar to serve as a,
“High-protein meal and a wake-up snack, when good espresso is not at hand (library, airplane, etc). The dream bar would have a lot of whey protein, a handful of roughly chopped nuts for the crunchiness (walnuts/almonds/hazelnuts), orange zest and some good source of fiber (coconut flour/oatmeal bran).”
1 cup (gluten-free or regular) oats
1/2 cup vanilla or coffee flavored whey protein powder
1/4 cup vanilla pea protein, rice protein or casein protein powder
1/4 cup chopped nuts
1/2 tablespoon coffee extract or essence (optional but lovely)
1/2 tablespoon toffee flavdrops
1/2 cup freshly-brewed coffee (I used filtered coffee instead of espresso, sorry Ilya, it just works better for the bars!)
1. Make your coffee and add 1/2 cup of it to the rest of the ingredients.
2. Mix it all with a spoon until you get a thick and sticky dough.
3. Press this dough onto a baking tray lined with baking paper or onto a silicone tray like I did.
4. Put it in the freezer for 30 minutes, slice, and munch! Or wrap in some baking paper or tinfoil to carry with you and eat later.
If you want add some chocolate to the bars to turn them into ‘mocha’ bars, melt 1/4 bar of dark chocolate and mix that in with the ingredients.
If you want to COAT the bars in chocolate, go for it.
If you want to add a tbsp or two of peanut butter or almond butter you can, just add a tiny bit of coconut flour to the mix so you’re bars don’t end up too sticky.
