Apple & Banana Protein Bars (Vegan)
This recipe was inspired by guilt. Guilt over the fact that my apple tree is, right now, BRIMMING with apples and I’ve only eaten a handful. Guilt over the fact that some of them have started to fall off the tree, unused and forever uneaten. It’s not out of laziness that I’ve ignored the tree and its apples (although laziness does play a role), it’s merely out of forgetfulness and… OK. Fine, fine. It’s laziness. But I honestly don’t know why! Because picking and cooking with apples is ridiculously easy. Take for example this recipe: all I did was blend a bunch of ingredients together (1 minute), grate a fresh apple into the mix (1 minute) and bake the whole thing on a brownie tray (45 minutes – but minutes I did other things during). It’s insanely easy to make and takes no time. So, in honor of my tree and its apples, I’d like to announce that I will be uploading apple-containing recipes all this week. Apple Protein Pie and Apple Protein Strudel; Apple Protein Pancakes and Apple Protein Fluff. Let me start with some cake bars:
1/2 cup (gluten-free) rolled oats
1/2 cup banana hemp protein powder (see Note 1 for subs)
1/2 cup almond milk
1 tablespoon peanut butter (or sunflower seed butter)
1/8 vanilla pea protein powder
1 grated fresh apple
Blend all the ingredients together and press the batter onto a brownie pan. Bake at 180 C (356 F) for about 45-60 minutes or until when you poke them with a knife, the knife comes out clean. You can then cut them into bars like I did – this will give you six bars, or you can cut them into squares! And get four big ones.
I sprinkled them on top with some MCT powder but this is optional (you could use coconut flakes too!)

Note 1: if you DON’T have Good Hemp’s banana hemp protein pow, that’s fine. You can still make these bars by using a) vanilla pea protein powder, b) vanilla brown rice protein powder, or (if you don’t care about the bars being vegan) you can use vanilla casein.
