Protein Animals Crackers – Take 1

I don’t know about you but whenever I see a kitchen store I HAVE to go in and when I do, I always seem to leave with something in my bag – paid for, of course. I can spend hours in there, going between “cute!”, “beh/that’s lame”, “awesome! should I buy it…CAN I FIT IT?”, and “who would buy THAT?!” because there’s a lot of pointless kitchen gadgets in the world (hail in this piece on grilling gadgets that should NOT exist). What there also is though is items of brilliance, like these animal cracker molds I was forced to buy last friday. They’re amazing! I’d actually been looking for animal cracker molds for ages in an attempt to make Protein Animals and now baaam! I can. So I made these animals. They were all right for a first attempt but I think the recipe can be improved, let me tell you how:

1/2 cup vanilla pea protein (or vanilla rice protein powder or vanilla casein)
1/4 cup date syrup (or agave or honey)
1/2 and 1/4 cup cartoned coconut milk (or almond milk)
1/4 cup liquid egg whites

1. Blend the ingredients together and bake flat, on a cookie tray, for about 25 minutes at 170 C (338 F) or until it cooks through.

2. Then, get your animal molds out and cut out some animals.

Macros per Animal (out of 12):

4.69g protein
3.3g carbs
0.4g fat
0.2g fiber

The issue I had with these animals – and the reason this recipe is subtitled ‘Take 1’ – is that they weren’t crunchy or thick enough. I think I should have used an egg instead of all the egg whites. Also, I think I should have added a tbsp of nut or seed butter in there to add more of a ‘crunchy body’ to the animals. It’s what I’ll do next time. But if you guys want to beat me to it, be my guest. I think the recipe should be perfect with these little tweaks. That being said, the animals were a blast to munch post-workout, next to a good old cold banana and a glass of milk, mmm..
