High Protein Strawberry & Coconut Powerslice – a Guest Recipe by James St Leger

This guest recipe is really exciting because it comes from James St Leger, a man who, like this recipe, is quite a beast! For those of you who don’t know him, James is a personal trainer, crossfitter, fitness model, and an all-around superathlete. He’s sponsored by Grenade Thermo Detonator, Liquid Grip, and Exertrain. ‘I’m a massive fan of great-tasting food but everytime I want something sweet when I am out and about, none of the shop-bought products I see seem to tick all the boxes. I try and eat a clean and healthy diet which assists me with both myt raining and keeping in good nick for my sponsors, and all the deserts/nibbles in the shops are made with food I tend to avoid.

A few weeks ago, a friend brought along some home made goodies to a meetup and I knew I had to give them a go myself! She had made some protein balls which tasted amazing so, after a bit of experimenting with my own ingredients, I came up with this, a Strawberry and Coconut Protein Power Slice! I hope you like it!


250g egg whites
100g Reflex Strawberry Whey
70g almonds (partially blended)
50g desiccated coconut
25g honey
Coconut oil


1. Bake ingredients for around 25-35 minutes at 175 C (around 350 F).

2. Mix whey into egg whites.

3. Force mixture through a strainer if you are having problems getting rid of the lumps.

4. Add in the desiccated coconut, almonds and honey.

5. Line a baking tin with a little coconut oil.

6. Add mixture to the tin and place in oven for 20 minutes.

7. Take out of tin and allow to cool.

8. Enjoy!

Macros per Serving (out of 8):

15.7g protein
4.5g carbs
9.4g fat
1.7g fiber

Allow to cool. Serve up and enjoy! I like this because the honey sinks to the bottom quite a bit, creating a moist and crunchy layer along with the coconut. Remember that, if you’d like the slices to be moister, you can add some extra coconut or almond milk and/or reduce the amount of whey. To lower the carbs even further, you can also replace honey with a sweetener. It depends on your taste buds and macros preference! For me though, this hit the spot right where I need it
