Dairy & Gluten-Free Jumbo Extra-Large Protein Muffins

This chocolate protein muffin recipe makes some SERIOUSLY BIG muffins that are absolutely packed with protein!

You know those times when you’re really craving something indulgent? When a light snack won’t quite hit the spot? That’s where these chocolate, American style muffins come in.

Each muffin contains OVER 40 GRAMS OF PROTEIN, so you can quite literally have your cake and eat it too!

Enough chit chatting, lets get into the recipe:

 

Ingredients:

1 cup liquid egg whites
1/2 cup chocolate vegan protein powder ( a high quality whey protein will also work)
1/2 cup buckwheat flakes
1/2 cup cocoa powder
2 cooked beetroots
1 teaspoon Golden Syrup Zero Syrups

Directions:

Blend ingredients together and bake inside this beast of a tray at 160 C (320 F) for about 40 minutes or until, upon stabbing, your stabbing utensil comes out clean.

Now, like their name suggests, these muffins are on the large side! What were they like? Well, as you can tell from the picture, they end up really dense! Kind of chocolate-fudgy actually. This is because there’s hardly any liquid in there apart from the egg whites. They were dense and super rich – super dark chocolatey and they had this complimentary mild beetroot touch to them that made them climb up to a 10 out of 10 rating. The chocolate lovers amongst you will be impressed!

  1. Hi! So excited to try these!!! I was wondering what brand specifically of hemp protein powder you use? Manitoba Harvest in Dark Chocolate, like you have on your Shopping page? Also, if I don’t have specifically “liquid egg whites”, would using just the egg white part of an egg be equivalent, or are they different things? Thanks!!

    • Hi Brian, you can. But ONLY! if you add in a hefty amount of sweetening too! Because chocolate hemp, unlike unflavored hemp, is very sweet and, well, chocolatey 😉
