Strawberry & Vanilla Protein Whoopa Cakes

With experimental cooking, a lot of things can go ‘wrong.’ The way I see it though, one should always try to turn failures on their head – to grab a flop and flip it into a triumph. It has happened to me a lot that I’ll be planning for one thing and then baaam: I’ll run head-first into another. For example, I’ll be shooting for a bread loaf and get punched by a cheesecake instead; I’ll open the oven expecting to see muffins and… kaPOW! find myself facing a family of cookies. One just has to be creative and roll with the punches; one has to accept the cards one’s dealt and with a BOOOOM! end up victorious! This recipe is an example of this: of how, even when things don’t go as planned, you can end up winning.  All you need is a sprinkle of creativity, a dash of imagination, and a hefty serving of thinking-outside-the-box 🙂

I wanted to create recipe for jam-filled protein donuts. Kind of like these ones? Yes, but I wanted to use my muffin cases and, instead of jam, use a protein + strawberry filling. You could say that my plan was doomed to ‘fail’ because, come on, how can one make jam-filled protein donuts without a) a donut tray and b) jam? I know. Maybe it was meant to be whoopa cakes from the beginning…

Ingredients:

1/2 cup liquid egg whites
2 tablespoons coconut flour
3/8 cup vanilla whey protein
1/2 cup milk
1 tablespoon tapioca flour
1 teaspoon baking powder

Directions:

1. Blended together and baked at 170 C for 15 minutes in six muffin cases.

2. When the muffins came out, I let them cool and proceeded to slice them in half (effectively beheading them). Then, I scooped a bit from both sides and coupled the muffin heads with the muffin heads and the muffin bodies with the muffin bodies. 

3. For the filling, I just blended together seven strawberries with 1/4 cup of vanilla casein (no milk or anything, the strawberries are wet enough inside).

4. Finally, I just filled the whoopa cakes and took a giant bite.

80.5kcals
9.5g protein
5.7g carbohydrates (2g sugars)
1.4g fat (1g sat)
2g fiber

Result? Delicious!!!!! The muffins ended up coconutty and bready, really fluffy and soft and, together with the filling? We’re talking about a sweet protein cake sandwich that explodes with creaminess upon chewing.
