Butternut Squash and Quinoa Protein Pancakes

Ingredients:

4 egg whites
1/4 cup vanilla whey protein powder
1/2 cup cooked butternut squash
1/4 cup cooked quinoa
3 tablespoons coconut flour

Directions:

1. Boil your quinoa in a pan and cook your butternut squash (either steam, roast or boil)

2. Blend together all ingredients (or whisk if you don’t have a blender) and let it rest for a few minutes

3. Set a medium frying pan over a medium heat and add coconut oil to pan

4. Ladle the pancake batter onto the pan and fry on each side until cooked through

5. Serve with your preferred toppings (Our Zero Syrups are perfect for pancakes)

  1. These were amazing! I made mine with sweet potato because I had some left-overs and ended up using cooked quinoa flakes. They turned out perfectly, not too mushy or dry, the exact consistency of pancake. Thanks for the awesome recipe.
