Upside Down Blueberry & Vanilla Protein French Muffins

What do you get if (and when) you cross a Vanilla Whey Protein Mufffin with a member of the Blueberry family, wait a generation until the product of the two matures, and then you cross THAT with French Toast. before turning the whole thing upside down? You get these delicious little Upside Down Blueberry and Vanilla Protein French Muffins! They’re unusual, sure, and hard to categorise. But the end product is really good. Try them for yourself and you’ll see!

Ingredients:

1 cup liquid egg whites
3/4 cup vanilla whey protein (Whey Protein 80 is ideal for these)
1/2 cup buckwheat flakes or oat flakes
2 tablespoons coconut flour
1 teaspoon baking powder
1 cup… frozen blueberries!

Directions

1. Blend together, divide into 6 muffin cases, and baked for around 35 minutes at 170 C (338 F).

2. Place blueberries at the bottom of muffin cases and pour batter over top of them and bake for a few minutes extra

3. Add a square of melted chocolate on top (optional but delicious!)
