1/2 cup pumpkin puree
1 tablespoon chestnut flour
3/4 cup egg whites
3 tablespoons quinoa flakes
3/4 cup chocolate Vegan Protein Powder (or Whey Protein)
3 tablespoons cocoa powder
1 whole egg
1/2 tablespoon sweetener
1.Blend all of the above together and separate into cookie shapes
2. bake for 20 minutes at 180 C (356 F).
2. When the cookie-cakes are baked, sandwich them together with 1/4 cup of Vanilla Vegan Protein mixed with 1/2 cup of coconut milk.

Canned coconut milk..or from the carton?
Carton, sorry. I actually seldom use the one from a can since it’s super heavy and all especially in baking 🙂
Instead of chestnut flour and quinoa flakes could you use almond or coconut flour? Could chocolate whey replace the rice and hemp?
Re the chestnut flour, sure! Re the whey, also sure BUT throw in some cottage cheese into the mix too so it doesn’t get all dry on ya 😉
