Whey Protein French Toast

Any bona fide French Toastian will tell you that the secret behind good French toast is in the bread. And this bread? Well, this bread isn’t just good. It’s amazing. And, the best part? It’s extremely healthy too.

Ingredients for the bread

For the bread:
1 small 210g can 
cooked unsalted butter beans
1/4 cup applesauce (unsweetened)
1/2 cup unsweetened or vanilla whey protein
2 tablespoons goji berries
1 cup liquid egg whites
1 banana
1/2 cup millet flakes
2 medjool dates
2 tablespoons psyllium husk
1 tablespoon lucuma powder
1 tablespoon vanilla essence
1/2 tablespoon baking soda

For batter

Coconut milk
1 egg

Directions
 
1. Blend ingredients together and bake for 25-30 minutes at 170 C (338 F) in either a cake or a bread pan.

2. Cut the bread however you like.

3. Mix 1 egg with coconut milk.

4. Dip bread in egg/coconut milk mixture and fry in a pan.

Notes
 
You don’t have to make a cakebread out of the above batter though. You can bake it as a bread loaf and that’d probably work just as well. In fact, baking it as a bread loaf would be better as it yield more (and rectangular) slices.

When ready to make the French toast, whip one egg with coconut milk and dunked three slices in there (the fourth slice was eaten earlier with just maple syrup – also delicious! but not quite French enough without the egg).
