These Dark Chocolate Protein Muffins are delicious and come with unbelievable filling!
Ingredients
1 cup plain Total 0% Greek yogurt
1 cup vegan protein (chocolate Vegan Wondershake would be perfect here, as would chocolate Vegan Protein)
2 tablespoons cocoa
1 tablespoon ground espresso
1 and 3/4 cup liquid egg whites
1 cup oat flour
3/4 cup milk
For the filling
1 cup of Greek yogurt
4 tbsp of pecans
3 (pitted) medjool dates
Directions
1. Mix the muffin ingredients together and baked the batter in muffin cases for 1/2 an hour at 350 degrees.
2. When they come out, let them cool slightly and make the filling by mixing 1 more cup of Greek yogurt with 4 tbsp of pecans + 3 (pitted) medjool dates.
3. Then, dig a hole inside each muffin and scoop this mixture inside!

Mmmmmmmmmm 🙂 chocolate and expresso my fav. Is the expresso actual ground expresso beans or would instant expresso coffee work here? Also must have macros as these sound devine!!! Xo Courtney
