Dark Chocolate Protein Muffins with a Hella Yummy Filling
This, I think, will be the last recipe I upload from this side of the pond (I’m leaving the US and going back home to England in a couple of days). This also means that it’s the last recipe that I upload without macros, wahoo, right? I’ve missed including them as I know many of you have too (again, apologies for that). Here’s what I did for/with these muffins. I got to say, they turned out superb! I hope you try them :-)
1 cup plain Total 0% Greek yogurt
1 cup brown rice protein
2 tablespoons cocoa (I used Hershey’s unsweetened pow)
1 tablespoon ground espresso (oh yeah)
1 and 3/4 cup liquid egg whites
1 cup oat flour
3/4 cup milk (I used unsweetened coconut but any will do)
1. I mixed the muffin ingredients together and baked the batter in muffin cases for 1/2 an hour at 350 degrees F.
2. When they came out, they were moist inside, soft and yummy but I felt they needed some sweetness.That’s when the filling came in = 1 cup of more Greek yogurt + 4 tbsp of pecans + 3 medjool dates; all of these were blended/mixed together and scooped inside each muffin (I just dug a hole in the muffins and stuffed them with filling).

End product? Celestial!!!!! The muffin chocolateness went beautifully with the yogurt/date/pecan filling. In addition to adding sweetness to the muffin, the pecans added that crunch factor and, with yogurtness of it all? well, uffffffffffff la la la :-))))))
