I’m back. My mini-vacation is now officially over. I’m back to my gym and my powders which wohoo :-))) but :-((( because I’m also back to face the fact that winter is too quickly approaching… adios sun and burning morning heat. C’est la vie though, ey? Anyways, I woke up full of jetlag and the desire to make something fun. The picture says it all, no? They’re just some chocolate protein muffins, horizontally sliced, filled with casein and sprinkled with ciinnamon. That’s it.
For the muffins:
1 cup unsalted cooked adzuki beans
1/8 cup cocoa
1/4 cup pea protein
1/8 cup chocolate hemp protein
1 cup egg whites
1/8 cup coconut flour
1 teaspoon baking powder
For the filling:
1 heaping scoop vanilla casein
1. Blend muffin ingredients and bake at 150 celsius for about 30 minutes.
2. Make the filling by whisking together the filling ingredients.
Macros per Serving (out of 8):
5.3g carbs (0.5g sugars/2.8g fiber)
6.1g carbs (2.8g fiber)
Now the muffins weren’t very sweet. Nice texture and chocolate-mmmness but not very sweet. See, I did this on purpose because the casein is quite sweet and offsets them well but do feel free to add honey/sweetener if you want them sweeter.They’re fun to squeeze down and bite into ;-)
