Sun Dried Tomato Protein Tortilla Crepes

Tortilla…Crepes… In a way, they straddle the border between the two, no? They can even be called wraps we reckon… Whatever you choose to call them though, here are the ingredients you need to make them:

Ingredients

1 cup egg whites
1/8 cup psyllium husks
1/8 cup sun dried tomatoes (or a couple of tablespoons sundried tomato paste)

Directions

1. Blend the above together. You will notice that the mixture will be gooey and kind of strange but that’s OK.

2. Get your pan SUPER hot and make sure it’s properly nonsticked (i.e. butter/oil it up or use a crepe nonstick pan).

3. Grab some of the mixture with a spoon and place it on the the centre of the hot pan, spreading it around the pan with your spoon so it’s all as flat as possible (you basically want the mixture to be thin and cooking evenly so spread it quickly)

4. Flip it

16g protein

15g carbs (out of which 8g is fibre!)

The above mixture yields 3 pretty big tortillas which you can then fill with whatever or even use to dip into stuff They’re just so great because they’re pretty much PURE protein (and fibre) and you can do so many things with them! For example, you can stuff them with chicken and avocado, or even just filled with hummus! Or leave out the sundried tomato, add some cinnamon instead and stuff them with chocolate (calling them crepes if you do). Endless high protein, low cal, high fibre!

  1. Well… these are pretty dang good!

    I might have used the wrong sundrieds (wet, in olive oil) and a little too much husk, but they still turned out great… A pretty viable tortilla substitute.

    cant wait to try other variations… like pesto. Mmmmm
