Ingredients (DRY):1 1/2 cup ground oatmeal (use coffee grinder)

2 scoops vanilla protein powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon baking powder
1/4 cup chopped pecans (or walnuts)

 

 

Ingredients (WET):

4 egg whites
2 teaspoon vanilla extract
2 tablespoons coconut oil
1 6oz plain yogurt (or vanilla to make a tad sweeter)
1 4oz applesauce cup ( 1/4cp)
1/4 cup stevia*
2 cups zucchini grated and squeezed of excess juice

Directions:

1. In two separate bowls ( wet in larger), mix and whisk all dry ingredients. Mix and whisk all wet ingredients first THEN add in zucchini, stir in.

2. Add dry ingredients in two to three batches into wet.

3. Place the above in a 7x 12 1/2 Pyrex dish or similar size. Bake for 30 minutes at 350 degrees fahrenheit or around 170 celsius. Hope you all enjoy!

PS – this recipe is at the ‘just enough’ sweetness level. I think its perfect but those who may prefer it slightly sweeter, use a little more stevia or add a flavoured yogurt as suggested.  Makes 12 bars ( if you use a bigger dish and cut more bars/squares, macros will need to be adjusted).
