Spinach Protein Pancakes (topped with anchovies & medjools)

These little savoury pancakes are really versatile – they can be topped with pretty much anything. Do try the anchovy, date and mayonnaise combo though, especially if you feel like trying out something totally new. We honestly can’t recommend it enough. The texture of the dates with the softness of the pancakes, the saltiness of the anchovy and then BAM! The sweet sharpness of the mayo and the spinach tying it all together… it’s unusual but trust me, it’s also delicious!

Ingredients

135 grams liquid egg whites
30 grams oats or quinoa flakes
95 grams cottage cheese
40 grams fresh organic baby spinach
7 grams pea protein (this is optional but a nice way to add in extra protein powder)

Directions

1. Blend everything together.

2. Fry as small pancakes on a nonstick pan.

  1. The spinach pancakes sound so good! I need to get some pea protein to try these! Won’t do the anchovies though as I don’t like them, but the green pancakes do look delicious! I love spinach!!
