This will be a high protein, low carb, ideally oatless, sugarless, crunchy (but soft) cookie. Feel free to try these getting-there protein cookie recipes.
Ingredients:
1/2 cup vanilla whey
2 eggs
2 dates
1/4 cup quinoa flakes
1/2 tablespoon apple fibre
1/8 tablespoon ground almonds
12g cocoa nibs
Baking soda
Directions:
Blend all ingredients together and bake at 150 Celsius for 15 minutes.

126kcals
4.4g fat
11g carbs (2.2g fibre)

I have been trying to perfect a protein cookie recipe too….right now I am experimenting with chickpea flour and hemp protein.
Ah that’s a great idea! chickpea flour. I’m gonna give chickpea flour a shot and also coconut flour, it shall be reached! tell me know how your search goes! there’s just so many protein cookie recipes out there that in my opinion fail to get the right booooom type of cookie
Don’t you love it when you grab the whey, knowing full well what it’s going to do in the oven, but you reach for it anyway…same thing happened to me today. Had to throw away something that would have tasted out of this world. Texture like a brick. And there was the pea and brown rice protein staring at me in hysterics. Experimentation is fun though … :)))
