This idea was inspired by papa bear, aka, me fathah, who loooves to eat roasted egg plans with just some oregano on top.
I was going to do the same but I ran out of oregano and wanted to add some protein.
1. Fry up onions & leaks with coconut oil
2. Top with olive oil and added pea protein to the whole thing. That was it.

Originally, I was going to eat them unsandwiched but then I thought, why not? It turned out great! I’m definitely going to be making more of these type of sandwiches because it’s a great way to pack in the veg and the eggplant I find has a really cool texture so… yup :-)))
